Pan Seared Scallops

Ingredients:

  • 3 oz fresh scallops
  • 1 tsp ghee
  • salt and pepper

Directions:

  1. Heat ghee in pan over medium-medium/high heat.Ghee will eventually melt into one liquid.
  2. Sprinkle raw scallops with salt and pepper.
  3. Once pan is hot, ensure the bottom of the pan is covered with ghee.
  4. Saute scallops for 2-5 minutes on each side.
  5. Ensure internal temperature is at least 120 degrees before removing from the heat. 150 degrees will be closer to medium doneness.
  6. Remove once desired temperature is reached, and outside of scallops are browned.
